Tonia’s Mango Cobbler

CRUST:
1 stick soft butter & 1 c sugar 
2 egg whites, 2 t vanilla, 1 t cinnamon
1 c flour, 1 c instant oats,

Mix butter and sugar, stirring well.  Add whites, vanilla and cinnamon.  Stir in flour and oats. 


FRUIT:
3  1- lb bags frozen mango chunks (thawed)
2 T lemon juice
2 T cornstarch
4 T sugar


Stir the fruit ingredients together and pour into a buttered  9×12 glass pan.  Dot the fruit with batter.   Bake at 400 for 30 minutes.   Serve with ice cream or whipped cream. 

~ apples can be sautéed with butter and cinnamon to make an apple cobbler.
