crispy corn tortillas
White northern beans, cooked and mashed with cumin, in oil/butter.
beef sausage, heated & sliced
garnishes: tomato, avocado, salsa, cilantro, peppers,
Mash beans in oil and/or butter and season with cumin.
Slather hot beans in a thin layer onto a crispy tortilla.
Cover with cheese dip.
Garnish with veggies of your choice.
Note: I make these recipes for my family and for their tastes but feel free to substitute the sausage with one of your choice.
my crockpot cheese dip: 2 cups of 2 % cheddar, 2 cups of sautéed bell peppers & onions, and one cup of milk. Stir well and heat on low for an hour or half an hour on high. Stir occasionally.
1.5 lb northern white beans, cooked and drained* (see note below)
1 t salt
1 c onion, sautéed or microwaved slightly
2 T grey poupon mustard
3 T worcestershire
1 c ketchup
1/2 cup brown sugar (might need more/less, depending on sugar in ketchup)
1 t garlic powder
Cook beans and add one teaspoon of salt. Place beans and onion in large container or leave in crockpot for adding the sauce.
Mix rest of ingredients in pouring bowl to make the sauce. Stir sauce carefully into beans. Ham or bacon can be added.
Bake in buttered, uncovered dish at 350 for 45 min- 1 hour or til thickened. Keep covered and on warm til ready to serve.
- do not drain if beans will be cooked with the intent to freeze/reheat. They will be need more juice for oven/crockpot/microwave reheating.
- I cooked the beans in my HB crockpot for 7 hours on low. Other crockpots could vary. Beans should not be too overcooked.
*my mother who is a diabetic likes these because they dont make her sugar rise too high.
