2 t cinnamon
1 cup sugar
1/2 c water
1 t vanilla
3-4 cups pecans or almonds (depending on how sweet you wantem)
Bring cinnamon, sugar and water to a boil. Lower heat to medium and when mixture is starting to thicken a bit add vanilla and nuts. Stir continuously until thickened and nuts are well-coated and there is no liquid left in the pan. Spread on waxed paper in single layer to cool.
I enjoyed these on the streets of Boston, served out of a paper cone. They are served often over salads and make a great snack by themselves.
